Instructions
  1. Add a little oil to a wok and heat gently.
  2. Chop the mushrooms, pepper and red onion and add to the wok.
  3. Increase heat and cook vegetables for around five minutes.
  4. Add the noodles and prawns to the wok and continue cooking for a further few minutes, until noodles have separated.
  5. Add the cream cheese, stir fry sauce and spinach. Continue cooking for two minutes.
  6. Add black pepper to taste.

One Pot Recipes – Butternut Squash & Sausage Casserole

I’m a huge lover of one pot recipes. Not only are they yummy and filling, but they can be healthy and super easy to make. As a busy working mum, one pot recipes are my go to meal option when I know I have a hectic day ahead. If you have a large slow cooker, these recipes are great to make a big batch for freezer ready meals too!

One of my favourite one pot recipes is butternut squash and sausage casserole. It’s packed full of healthy veg, makes the house smell amazing as it cooks and tastes totally scrumptious!

  1. Peel the squash and carrot, cube both to preferred size.
  2. Heat sausages in a pan, when evenly browned chop into chunks.
  3. Dice the olives.
  4. Add the squash, carrot, olives and carrot to the slow cooker.
  5. Add the tin of chopped tomatoes, passata and tomato puree into the slow cooker.
  6. Add the oregano and parsley and stir all ingredients together.
  7. Heat on medium for 5 - 6 hours.
  8. Add the spinach around 30 minutes before serving.
  9. Add the black pepper to taste.
