Jalapeno & Olive Bread
Rustic jalapeno and olive bread, perfect for the winter months.

Instructions
  1. Add the flour and yeast to a large bowl, mix well.
  2. Mix in the chopped olives and jalapenos.
  3. Make a well in the centre of the mixture, add the oil and water.
  4. Mix with a fork until the mixture becomes sticky,
  5. Sieve more bread flour onto the work surface. Remove the dough from the bowl and knead for around ten minutes.
  6. Put the dough back into the bowl, cover with a clean towel and leave in a warm area for 45-60 minutes.
  7. Preheat the oven to 210 degrees celsius and prepare a baking tray with oil or parchment.
  8. When sufficiently risen, knock the dough back by folding it in on itself, until all air is removed.
  9. Put back in the bowl and leave again for another 45-60 minutes.
  10. When fully risen transfer the dough to the baking tray and bake for 15-20 minutes or until golden brown.

Now like a lot of other people out there, I’m grazer. I love to snack and if I’m not careful I can eat my way through a packet of biscuits before nightfall. That’s why I like to have syn free snacks to hand! Whenever I’m feeling a little peckish or if I just fancy a nibble. Completely syn free nibbles can satisfy the need to eat, whilst being completely guilt free.

The reason I love hummous and carrot sticks so much, is that it goes a long way to increasing your speed food intake throughout the day. It’s also quick and easy, the perfect combination!

Instructions
  1. Chop the red pepper and remove the seeds. Place on a baking tray, spray with frylight and roast until soft.
  2. Once the pepper is ready, add all the other ingredients to a food processor and whizz until it forms a smooth paste.
  3. If the mixture seems to thick, add a little water until the right consistency is achieved.
  4. Chop the carrots into snackable sticks and get dipping!

As much as eating healthy is important, there comes a time in our lives when a little comfort food is on the cards. Sausage rolls are the perfect bit of stodge that will hit the spot nicely. They take only a few minutes to prepare and taste absolutely delicious!

Instructions
  1. Preheat the oven to 220 degrees.
  2. Add sausage meat to a bowl, if using sausages remove the skin.
  3. Add worcester sauce, parsley and black pepper and mix together thoroughly.
  4. Roll out pastry until it's around half a centimetre thick. slice into three equal strips.
  5. Spread a generous helping on Branston pickle over each strip of pastry, then sprinkle the cheese over the pickle.
  6. Roll the sausage meat between your hands and place in a line, the full length of each strip of pastry.
  7. Brush the edge of each strip of pastry with beaten egg. Fold the pastry and press down onto the egg until secure.
  8. Score marks into the top of each roll with a sharp knife.
  9. Brush each roll with beaten egg.
  10. Finally, cut each roll in half to make six rolls. Place on a baking tray and place them in a preheated oven. Bake for around 40 minutes.

  1. Add a little oil to a wok and heat gently.
  2. Chop the mushrooms, pepper and red onion and add to the wok.
  3. Increase heat and cook vegetables for around five minutes.
  4. Add the noodles and prawns to the wok and continue cooking for a further few minutes, until noodles have separated.
  5. Add the cream cheese, stir fry sauce and spinach. Continue cooking for two minutes.
  6. Add black pepper to taste.

I’m a huge lover of one pot recipes. Not only are they yummy and filling, but they can be healthy and super easy to make. As a busy working mum, one pot recipes are my go to meal option when I know I have a hectic day ahead. One of my favourite one pot recipes is butternut squash and sausage casserole. It’s packed full of healthy veg, makes the house smell amazing as it cooks and tastes totally scrumptious!

  1. Peel the squash and carrot, cube both to preferred size.
  2. Heat sausages in a pan, when evenly browned chop into chunks.
  3. Dice the olives.
  4. Add the squash, carrot, olives and carrot to the slow cooker.
  5. Add the tin of chopped tomatoes, passata and tomato puree into the slow cooker.
  6. Add the oregano and parsley and stir all ingredients together.
  7. Heat on medium for 5 - 6 hours.
  8. Add the spinach around 30 minutes before serving.
  9. Add the black pepper to taste.
